Beefy cheesy Rice Bake
Ingredients:
– 1 lb ground beef
– 1 cup uncooked long-grain rice
– 1 onion, diced
– 2 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes
– 2 cups beef broth
– 1 tsp paprika
– 1 tsp dried oregano
– Salt and pepper to taste
– 2 cups shredded cheddar cheese
– 1/2 cup chopped fresh parsley
Instructions:
– Preheat oven to 375°F (190°C).
– In a large skillet, brown the ground beef over medium heat. Drain excess fat.
– Add onion and garlic to the skillet. Cook until onion is translucent.
– Stir in rice, diced tomatoes, beef broth, paprika, oregano, salt, and pepper.
– Bring to a boil, then reduce heat and simmer for 5 minutes.
– Transfer mixture to a 9×13 inch baking dish.
– Cover with foil and bake for 25 minutes.
– Remove foil, sprinkle cheese over the top, and bake uncovered for another 10 minutes until cheese is melted and bubbly.
– Garnish with fresh parsley before serving.
