Ingredients:

Chicken:

4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
Salt and pepper to taste
2 eggs, beaten
1/2 cup breadcrumbs
2 tbsp olive oil or butter for frying
Parmesan Mushroom Sauce:

2 tbsp butter
8 oz mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Chicken: Season chicken breasts with salt and pepper. In a bowl, mix flour and Parmesan cheese. Place beaten eggs in another bowl, and breadcrumbs in a third bowl.
Dredge each chicken breast in the flour mixture, dip in eggs, then coat with breadcrumbs.
Heat olive oil or butter in a skillet over medium heat. Cook chicken for 4-5 minutes per side, or until golden and cooked through. Transfer to a plate and keep warm.
Make the Sauce: In the same skillet, add butter and mushrooms. Sauté until mushrooms are soft and golden, about 5 minutes.
Add garlic and cook for 1 minute. Pour in the heavy cream and stir in Parmesan cheese. Simmer until the sauce thickens, about 3-5 minutes. Season with salt and pepper.
Serve: Spoon the Parmesan mushroom sauce over the crispy chicken, garnish with fresh parsley, and enjoy!
