Crockpot Ham and Potato Casserole Recipe
This warm, hearty, and creamy casserole is the ultimate comfort food, perfect for busy days!
Ingredients:
• 4 cups potatoes (peeled and diced into 1-inch cubes)
• 2 cups cooked ham (diced)
• 1 medium onion (diced)
• 2 cups shredded cheddar cheese
• 1 can (10.5 oz) cream of chicken or cream of mushroom soup
• 1/2 cup sour cream
• 1/4 cup milk
• 1 tsp garlic powder
• 1/2 tsp black pepper
• Optional: 1/4 cup chopped fresh parsley for garnish
Instructions:
1. Prep the crockpot:
• Spray the inside of your crockpot with nonstick cooking spray or use a crockpot liner for easy cleanup.
2. Layer the ingredients:
• Place half of the potatoes in the bottom of the crockpot.
• Top with half of the ham, onion, and cheese. Repeat the layers.
3. Make the sauce:
• In a mixing bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, and black pepper. Mix well.
4. Pour and cook:
• Pour the sauce evenly over the layered
ingredients.
• Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.
5. Finish with cheese:
• About 15 minutes before serving, sprinkle additional cheese on top (if desired). Cover and let the cheese melt.
6. Serve:
• Garnish with fresh parsley and serve warm.
Tips:
• Add frozen peas, corn, or broccoli for extra veggies.
• Swap cheddar for a cheese blend like Swiss or Monterey Jack for a different flavor.
• Leftovers can be refrigerated and reheated for up to 3 days.
