Crockpot French Onion Meatloaf

Ingredients:

2 pounds ground beef
1 packet French onion soup mix
1 cup breadcrumbs
½ cup milk
2 eggs, beaten
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 cup caramelized onions
1 cup Swiss cheese, sliced
Fresh thyme, for garnish

Directions:

Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, milk, eggs, ketchup, and Worcestershire sauce. Mix until all ingredients are evenly incorporated, being careful not to overwork the meat.
Shape the Meatloaf: Form the mixture into a loaf shape and place it in your crockpot.
Add Toppings: Spread the caramelized onions over the top of the meatloaf. Cover with the lid.
Cook: Set the crockpot to low and cook for 6-8 hours or on high for 3-4 hours, until the internal temperature of the meatloaf reaches 160°F (71°C).
Add Swiss Cheese: During the last 10-15 minutes of cooking, place the Swiss cheese slices on top of the meatloaf. Cover and allow the cheese to melt.
Serve: Carefully remove the meatloaf from the crockpot and garnish with fresh thyme before serving. Slice and enjoy with your favorite side dishes!
