Ingredients:
For the Chicken Bites:
2 large chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 tbsp unsalted butter
4 cloves garlic, minced
1 tsp paprika
1/2 tsp Italian seasoning
Salt and pepper, to taste
For the Parmesan Pasta:
12 oz pasta (fettuccine or penne work great)
2 tbsp unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/4 tsp ground nutmeg (optional)
Salt and pepper, to taste
Fresh parsley or basil, chopped, for garnish
Directions:
1. Prepare the Chicken Bites:
Heat olive oil and butter in a large skillet over medium heat.
Season the chicken pieces with paprika, Italian seasoning, salt, and pepper.
Add the chicken to the skillet and cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through.
Stir in the minced garlic and cook for an additional minute. Remove the chicken from the skillet and set aside.
2. Cook the Pasta:
While the chicken cooks, prepare the pasta according to package instructions. Reserve 1/2 cup of the pasta water, then drain and set aside.
3. Make the Creamy Parmesan Sauce:
In the same skillet used for the chicken, melt the butter over medium heat. Add the garlic and sauté for 1 minute.
Pour in the heavy cream and stir, allowing it to warm through (do not boil).
Gradually whisk in the Parmesan cheese, letting it melt and create a smooth sauce. If the sauce is too thick, add a splash of the reserved pasta water.
Season with salt, pepper, and a pinch of nutmeg, if desired.
4. Combine & Serve:
Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Return the chicken bites to the skillet and stir to combine.
Garnish with fresh parsley or basil and serve immediately.
