Cajun Shrimp Bake
This spicy and savory one-pan dish is packed with bold Cajun flavors, tender shrimp, and roasted veggies. Easy to make and loaded with flavor, it’s perfect for busy nights or a crowd-pleasing dinner!
Ingredients:
1 lb large shrimp, peeled and deveined
2 cups baby potatoes, halved
1 cup fresh green beans, trimmed
1 red bell pepper, sliced
2 tbsp olive oil
2 tbsp Cajun seasoning
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 lemon, sliced (optional, for serving)
Fresh parsley, chopped (for garnish)
Directions:
1 Preheat oven: Set to 400°F (200°C) and line a large baking sheet with parchment paper.
2 Prep the veggies: Toss potatoes, green beans, and bell pepper with 1 tbsp olive oil, 1 tbsp Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Spread on the baking sheet and roast for 15 minutes.
3 Season the shrimp: In a bowl, toss shrimp with the remaining olive oil and Cajun seasoning.
4 Add shrimp to the pan: Remove the baking sheet from the oven, push the veggies to the side, and place shrimp in a single layer. Roast for an additional 8-10 minutes, or until shrimp are pink and cooked through.
5 Serve: Garnish with fresh parsley and a squeeze of lemon juice for a bright finish. Serve hot with crusty bread or over rice.
