Garlic Parmesan Chicken Meatloaves

Ingredients:

 

1 lb ground chicken

 

1/2 cup breadcrumbs

 

1/4 cup grated Parmesan cheese

 

1/4 cup shredded mozzarella cheese

 

2 garlic cloves, minced

 

1 large egg

 

1/2 tsp Italian seasoning

 

Salt and pepper, to taste

 

2 tbsp fresh parsley, chopped (optional, for garnish)

 

Topping:

 

1/4 cup grated Parmesan cheese

1 tbsp melted butter

1/2 tsp garlic powder

Instructions:

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare Meatloaf Mixture:

In a large bowl, combine ground chicken, breadcrumbs, grated Parmesan, shredded mozzarella, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing.

Form Mini Meatloaves:

 

Divide the mixture into 4–6 equal portions and shape each into small, oval meatloaves. Place on the prepared baking sheet.

Prepare Topping:

 

In a small bowl, mix the grated Parmesan, melted butter, and garlic powder. Spoon this mixture over the top of each meatloaf for a flavorful crust.

Bake:

Bake for 20-25 minutes, or until the meatloaves are golden and the internal temperature reaches 165°F (74°C).

Serve:

Garnish with chopped parsley, if desired, and serve with mashed potatoes, a side salad, or roasted veggies.

Notes:

Make it Spicy: Add a pinch of red pepper flakes to the meatloaf mixture for a kick.

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
