Garlic Butter Chicken Bites with Creamy Parmesan Pasta
Ingredients:
For the Chicken Bites:
1 lb (450g) chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons unsalted butter
3 garlic cloves, minced
1 teaspoon smoked paprika
1/2 teaspoon Italian seasoning
Salt and pepper to taste
For the Parmesan Pasta:
8 oz (225g) fettuccine or spaghetti
2 tablespoons butter
3 garlic cloves, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/4 teaspoon nutmeg (optional)
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Cook the Pasta:
Boil a large pot of salted water and cook the pasta according to package instructions. Drain and set aside.
Prepare the Chicken Bites:
In a skillet, heat olive oil over medium-high heat. Add the chicken pieces, smoked paprika, Italian seasoning, salt, and pepper. Sear until golden brown on all sides (about 6-7 minutes).
Add butter and minced garlic to the skillet, stirring for 1-2 minutes until fragrant. Remove chicken from the skillet and set aside.
Make the Creamy Parmesan Sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
Stir in heavy cream, bringing it to a gentle simmer. Gradually whisk in the Parmesan cheese until melted and smooth. Season with nutmeg, salt, and pepper.
Combine:
Add the cooked pasta to the sauce, tossing to coat evenly. Return the chicken bites to the skillet, mixing gently to combine.
Serve:
Garnish with fresh parsley and serve immediately for a warm, comforting meal.
