Creamy Pumpkin Gnocchi with Spinach and Sausage

 

Ingredients

 

1 lb gnocchi (store-bought or homemade)

1 lb Italian sausage, sliced into rounds

2 cups fresh spinach

1 cup pumpkin puree

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tbsp olive oil

2 cloves garlic, minced

1/2 tsp nutmeg

Salt and black pepper, to taste

Fresh basil or thyme, for garnish

 

Directions

 

1 Cook the Sausage: Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned and cooked through. Remove and set aside.

 

2 Sauté Garlic: In the same skillet, add minced garlic and cook until fragrant (about 1 minute).

 

3 Create the Sauce: Stir in pumpkin puree, heavy cream, Parmesan cheese, nutmeg, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens.

 

4 Cook the Gnocchi: While the sauce is simmering, boil the gnocchi in salted water according to package instructions. Drain and add to the skillet.

 

5 Add Spinach and Sausage: Toss in the fresh spinach and cooked sausage. Stir everything together and cook until the spinach wilts.

 

6 Serve & Garnish: Plate the gnocchi and garnish with fresh basil or thyme. Enjoy warm!
