Vegetable Beef Soup
This hearty vegetable beef soup is packed with ground beef, tender vegetables, and rich tomato flavors. It’s a comforting and quick-to-make dish that’s perfect for warming you up on chilly days.

Ingredients:
1 lb ground beef
1 small onion, diced
1 tsp garlic, minced
Salt & pepper, to taste
3 ½ cups beef broth
1 (15 oz) can petite diced tomatoes
1 (10.5 oz) can condensed tomato soup
2 cups frozen mixed vegetables (corn, peas, carrots, and green beans)
1 tsp dried basil
½ tsp dried oregano
Directions:
Cook the Ground Beef:
In a large pot or Dutch oven over medium heat, cook the ground beef, onion, and garlic until the beef is browned and fully cooked. Drain any excess fat. Season with salt and pepper to taste.
Build the Soup Base:
Add the beef broth, diced tomatoes (with juices), and condensed tomato soup to the pot. Stir well to combine.
Add the Vegetables and Seasonings:
Stir in the frozen mixed vegetables, dried basil, and oregano. Bring the soup to a boil, then reduce the heat to low.
Simmer:
Cover and simmer the soup for 20-25 minutes, stirring occasionally, until the vegetables are tender, and the flavors meld together.
Serve:
