Golden-Fried Bologna Sandwiches with Melted Cheese

Ingredients:

8 slices of thick-cut bologna

4 slices of your favorite bread (Texas toast or sourdough works well)

4 slices of cheddar cheese (or your choice of cheese)

2 tablespoons butter, softened

1 tablespoon mayonnaise (optional, for spreading)

1/2 teaspoon Dijon mustard (optional, for flavor)

 

Directions:

 

Heat a nonstick skillet over medium heat.

Slightly score the edges of each bologna slice to prevent curling during frying.

Place the bologna slices in the hot skillet and cook until golden-brown and crispy, about 2 minutes per side. Remove and set aside.

Spread butter evenly on one side of each slice of bread. If desired, spread a thin layer of mayonnaise and Dijon mustard on the other side for extra flavor.

Assemble the sandwiches by layering a slice of cheese, 2 slices of fried bologna, and another slice of cheese between two pieces of bread (buttered side out).

Place the sandwich in the skillet over medium heat and cook until the bread is golden and crispy, and the cheese is melted, about 2-3 minutes per side. Press down gently with a spatula for even cooking.

Slice the sandwich in half and serve warm with chips, pickles, or your favorite side.
