Low Carb Unstuffed Cabbage Casserole
Ingredients:
1 lb ground beef or ground turkey
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 small head green cabbage, chopped (about 6 cups)
1 can (14.5 oz) diced tomatoes, with juice
1 can (8 oz) tomato sauce
1/2 cup beef or vegetable broth
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1/2 tsp dried oregano
Salt and pepper to taste
1 cup shredded mozzarella or cheddar cheese (optional, for topping)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Cook the Meat and Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
Add the garlic and cook until fragrant, about 30 seconds.
Add the ground beef or turkey, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
Add the Cabbage and Seasonings:
Stir in the chopped cabbage, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, smoked paprika, and oregano.
Season with salt and pepper to taste. Let the mixture simmer for about 10-15 minutes, stirring occasionally, until the cabbage is tender.
Assemble the Casserole:
Transfer the cabbage mixture to a 9×13-inch baking dish. Spread it out evenly.
If using, sprinkle shredded cheese on top.
Bake:
Cover with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
Serve:
Garnish with fresh parsley if desired, and serve warm.
