Loaded Smashed Potatoes

Ingredients

2 lbs small red potatoes or baby potatoes
4 tbsp unsalted butter
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup crumbled bacon (cooked)
2-3 green onions, chopped
1/4 cup heavy cream or milk (optional, for creamier texture)
Salt and pepper, to taste
Extra shredded cheese for topping (optional)

Instructions

1. Cook the Potatoes:

Wash the potatoes and place them in a large pot.
Cover with cold water and add a pinch of salt.
Bring the water to a boil over medium-high heat and cook the potatoes for 15-20 minutes, or until they are fork-tender.
Drain the potatoes and return them to the pot.
2. Smash the Potatoes:

Using a potato masher or the back of a fork, gently smash the potatoes, leaving some chunks for texture.
Add butter, sour cream, and a splash of heavy cream or milk (if using) to the potatoes.
Season with salt and pepper to taste and mix well.
3. Add the Toppings:

Stir in shredded cheddar cheese, crumbled bacon, and chopped green onions.
Mix until the cheese begins to melt and everything is well combined.
4. Bake (Optional):

Preheat your oven to 375°F (190°C).
Transfer the smashed potatoes to a greased baking dish and sprinkle with additional cheese if desired.
Bake for 10-15 minutes, or until the top is golden and the cheese is melted and bubbly.
5. Serve:

Garnish with more chopped green onions, bacon, and cheese before serving. Enjoy your creamy, cheesy, loaded smashed potatoes!
