Crispy Chicken with BBQ Sauce and Mashed Potatoes
Ingredients:
• For the Chicken:
o 4 bone-in, skin-on chicken thighs or breasts
o Salt and black pepper, to taste
o 1 teaspoon garlic powder
o 1 teaspoon smoked paprika
o 2 tablespoons olive oil
• For the BBQ Sauce:
o 1 cup BBQ sauce (homemade or store-bought)
o 1 tablespoon honey
o 1 teaspoon apple cider vinegar
o 1/2 teaspoon chili powder (optional for a bit of heat)
• For the Mashed Potatoes:
o 4 large potatoes, peeled and cubed
o 1/2 cup milk
o 1/4 cup unsalted butter
o Salt and black pepper, to taste
o Fresh chives or parsley, chopped (for garnish)
Instructions:
1. Prepare the Chicken:
o Preheat your oven to 400°F (200°C).
o Pat the chicken pieces dry with paper towels. Season them with salt, black pepper, garlic powder, and smoked paprika on both sides.
o In a large oven-safe skillet, heat the olive oil over medium-high heat. Place the chicken skin-side down in the skillet and cook for 5-7 minutes until the skin is crispy and golden brown.
2. Bake the Chicken:
o Flip the chicken over and transfer the skillet to the preheated oven. Bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
3. Prepare the BBQ Sauce:
o In a small saucepan over medium heat, combine the BBQ sauce, honey, apple cider vinegar, and chili powder (if using). Stir well and let it simmer for 5-7 minutes, allowing the flavors to meld together. Set aside.
4. Prepare the Mashed Potatoes:
o While the chicken is baking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 15-20 minutes, or until they are fork-tender.
o Drain the potatoes and return them to the pot. Add milk and butter, mashing until smooth and creamy. Season with salt and black pepper to taste.
5. Serve:
o Drizzle the BBQ sauce generously over the crispy chicken.
o Serve the chicken alongside a generous portion of mashed potatoes. Garnish with fresh chopped chives or parsley for a pop of color.
Tips:
• Serve with a side of steamed or roasted vegetables to round out the meal.
• For extra flavor, you can add roasted garlic to the mashed potatoes or sprinkle a touch of smoked paprika on top.
