 Ingredients

For the Schnitzel:

4 boneless pork loin chops
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil
2 tablespoons butter
For the Dijon Gravy:

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons Dijon mustard
Salt and black pepper to taste

 Directions

Prepare the Pork:

Place each pork chop between two sheets of plastic wrap and pound to about 1/4-inch thickness using a meat mallet.
Season both sides with salt, pepper, garlic powder, and paprika.
Bread the Pork:

Dredge each chop in flour, shaking off excess.
Dip into beaten eggs, ensuring full coverage.
Coat with breadcrumbs, pressing gently to adhere.
Cook the Schnitzel:

In a large skillet, heat olive oil and butter over medium-high heat.
Fry each schnitzel for 3-4 minutes per side until golden brown and cooked through.
Transfer to a paper towel-lined plate to drain excess oil.
Prepare the Dijon Gravy:

In a saucepan, melt butter over medium heat.
Whisk in flour to form a roux; cook for 1-2 minutes until lightly golden.
Gradually add chicken broth, whisking constantly to prevent lumps.
Stir in heavy cream and Dijon mustard; simmer until the gravy thickens to your desired consistency.
Season with salt and pepper to taste.
Serve:

Plate the pork schnitzel and generously spoon the Dijon gravy over the top.
Pair with mashed potatoes, spaetzle, or a fresh green salad for a complete meal.
