Ingredients:

4 boneless, skinless chicken breasts, pounded to even thickness
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon unsalted butter
8 ounces mushrooms, sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1 cup chicken broth
1 cup heavy cream
12 ounces egg noodles
2 tablespoons unsalted butter (for noodles)
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (for garnish)

Directions:

Prepare the Chicken:

Season the chicken breasts with salt and pepper on both sides.
In a large skillet over medium-high heat, add olive oil. Once hot, add the chicken breasts.
Cook for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
Sauté the Vegetables:

In the same skillet, reduce heat to medium and add 1 tablespoon of unsalted butter.
Add sliced mushrooms and sauté until they release their juices and become golden brown, about 5 minutes.
Stir in minced garlic, dried thyme, and dried oregano. Cook for an additional 1-2 minutes until fragrant.
Prepare the Sauce:

Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce by half, about 5 minutes.
Stir in heavy cream and return to a simmer. Cook until the sauce thickens slightly, approximately 3-4 minutes.
Cook the Noodles:

While the sauce is simmering, cook egg noodles according to package instructions. Drain and return to the pot.
Add 2 tablespoons of unsalted butter to the hot noodles and toss until the butter is melted and noodles are well coated.
Combine and Serve:

Return the cooked chicken breasts to the skillet with the creamy mushroom sauce. Allow them to warm through for 2-3 minutes.
