Ingredients:

 

2 lbs beef sirloin or flank steak, thinly sliced

 

1 large onion, sliced

 

2 bell peppers (any color), sliced

 

8 oz mushrooms, sliced

 

3 garlic cloves, minced

 

1/4 cup soy sauce

 

1/4 cup beef broth

 

2 tablespoons tomato paste

 

1 tablespoon Worcestershire sauce

 

1 teaspoon smoked paprika

 

1/2 teaspoon black pepper

 

1/2 teaspoon salt

 

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

 

Cooked rice or mashed potatoes for serving

 

Fresh parsley, chopped, for garnish

Instructions:

1. Prepare the Steak:

Place the sliced steak at the bottom of your crockpot.

2. Add Vegetables:

Layer the onion, bell peppers, mushrooms, and garlic over the steak.

3. Mix the Sauce:

In a small bowl, combine soy sauce, beef broth, tomato paste, Worcestershire sauce, smoked paprika, salt, and pepper. Pour the mixture over the steak and vegetables.

4. Cook:

Cover and cook on low for 6-8 hours or high for 3-4 hours, until the steak is tender and the vegetables are cooked through.

5. Optional Thickening:

If you prefer a thicker sauce, stir in the cornstarch slurry during the last 30 minutes of cooking. Mix well and let it thicken.

6. Serve:

Serve the pepper steak over rice or mashed potatoes. Garnish with fresh parsley for a vibrant touch.
