Cheesy Sausage and Potato Casserole

Super easy, and it’s a dump meal! Total cost is about $12 or less, and it feeds a lot.
1 package Kielbasa or smoked sausage (I use Ekrich Sausage) cut in chunks as shown in photo
1 32 oz bag frozen hashbrowns

Ingredients:

– 1 package Kielbasa or smoked sausage (I use Ekrich Sausage), cut into chunks
– 1 32 oz bag frozen hashbrowns
– 1 small onion, diced
– 2 cups shredded cheddar cheese
– ½ cup sour cream
– ½ cup milk
– 1 10 oz can of cream of mushroom or cream of chicken soup
– Salt and pepper, to taste
– Minced garlic, to taste
– Onion powder, to taste

 

Directions:

1. Add the sausage, frozen hashbrowns, diced onion, and shredded cheese to a greased slow cooker (I use crockpot liners for easy cleanup).
2. In a separate bowl, mix together the soup, milk, and sour cream.
3. Season the mixture with salt, pepper, minced garlic, and onion powder to your taste, then pour it over the sausage and hashbrowns.
4. Sprinkle about ½ cup of cheese on top of the mixture.
5. Cook on low for 6 hours or on high for about 3-4 hours.

Serve with a salad, roasted veggies, or even some Texas garlic toast for a complete meal!
