Hearty Hamburger Noodle Soup
Warm up with this comforting and easy-to-make Hamburger Noodle Soup, packed with ground beef, tender noodles, and flavorful vegetables. It’s a perfect meal for any day of the week!
Ingredients:
1 pound lean ground beef
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 cup celery, sliced
1 cup carrots, sliced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and freshly ground black pepper, to taste
6 cups beef broth
1 can (28 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 tablespoon soy sauce
2 cups egg noodles or macaroni
Fresh parsley, chopped (for garnish)
Instructions:
Sauté the Vegetables:
In a large pot, heat olive oil over medium heat.
Add diced onion, sliced celery, and carrots; sauté until softened, about 5 minutes.
Stir in minced garlic and cook for an additional minute.
Cook the Ground Beef:
Add ground beef to the pot; cook until browned, breaking it up with a spoon as it cooks.
Drain any excess fat if necessary.
Season and Simmer:
Stir in dried oregano, dried basil, salt, and pepper.
Pour in beef broth, diced tomatoes with their juice, tomato sauce, and soy sauce; bring to a boil.
Reduce heat to low and let the soup simmer for 15 minutes to allow flavors to meld.
Add Noodles:
Stir in egg noodles or macaroni; continue to simmer until noodles are tender, about 10 minutes.
Serve:
Ladle soup into bowls; garnish with freshly chopped parsley.
