Cheesy Garlic Bread Shrimp Grilled Cheese
Ingredients:
– 8 slices of thick sourdough bread
– ½ cup unsalted butter, softened
– 6 cloves garlic, minced
– 1 teaspoon dried parsley
– 1 teaspoon paprika
– 1 pound shrimp, peeled and deveined
– 1 cup shredded mozzarella cheese
– 1 cup shredded cheddar cheese
– Salt and pepper to taste
– Optional: crushed red pepper flakes for added heat
Instructions:
1. Prepare the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, dried parsley, paprika, salt, and pepper until well combined. Set aside.
2. Cook the Shrimp: In a skillet over medium heat, melt 1 tablespoon of the garlic butter mix. Add the shrimp and sprinkle with salt, pepper, and crushed red pepper flakes if desired. Sauté for about 2-3 minutes, or until the shrimp turn pink and opaque. Remove from heat and set aside.
3. Assemble the Sandwiches: Take 4 slices of sourdough bread and spread a generous layer of garlic butter on one side of each slice. On the unbuttered side of 2 slices, layer half of the mozzarella and cheddar cheese, followed by the sautéed shrimp. Top with the remaining cheese and cover with the other slice of bread, buttered side up.
4. Grill the Sandwiches: In the same skillet you used for the shrimp (wipe it out if necessary), heat over medium-low heat. Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted. You may want to press down slightly with a spatula for even cooking.
5. Serve: Remove the sandwiches from the skillet and let them sit for a minute. Slice in half and serve warm, ideally with a side of marinara sauce for dipping!
