Crispy Fish Batter
Ingredients
– 1 cup all-purpose flour
– 1/4 cup cornstarch
– 1 teaspoon baking powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1 cup cold sparkling water or beer (for extra crispiness)
– 4-6 fish fillets (like cod, haddock, or tilapia)
– Vegetable oil for frying
Instructions
In a large mixing bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder.
Gradually add cold sparkling water or beer to the dry ingredients, whisking until you have a smooth batter. It should be thick enough to coat the back of a spoon.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Pat the fish fillets dry with paper towels to remove any excess moisture. This will help the batter adhere better.
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil.
Fry the fish in batches for 4-6 minutes, turning occasionally, until the batter is golden brown and crispy, and the fish is cooked through.
Remove the fish from the oil and drain on paper towels to remove any excess oil.
Serve your crispy fish with lemon wedges, tartar sauce, or your favorite dipping sauce. Enjoy!
