Ingredients:

 

1 pound ground beef or turkey
1 medium onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (10 oz) enchilada sauce
1 can (14.5 oz) diced tomatoes
2 tablespoons taco seasoning
1 cup shredded cheddar cheese
Salt and pepper, to taste
Optional toppings: sour cream, chopped green onions, tortilla chips

Directions:

 

Cook the Meat:

In a large pot over medium heat, sauté the diced onion until translucent.
Add the ground beef or turkey and cook until browned. Drain any excess fat.
Add Garlic and Seasoning:

Combine Remaining Ingredients:
