Creamy Garlic Parmesan Tortellini with Chicken & Broccoli
This delightful dish combines tender cheese-filled tortellini, juicy chicken, and fresh broccoli, all enveloped in a rich garlic Parmesan cream sauce. It’s a comforting meal that’s both satisfying and easy to prepare.
Ingredients:
12 oz cheese tortellini (fresh or frozen)
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups broccoli florets (fresh or frozen)
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Tortellini and Broccoli:
Bring a large pot of salted water to a boil.
Add the tortellini and cook according to package instructions until al dente.
In the last 2–3 minutes of cooking, add the broccoli florets to the boiling water with the tortellini.
Drain both the tortellini and broccoli, and set aside.
Sauté the Chicken:
In a large skillet over medium-high heat, heat 1 tablespoon of olive oil.
Season the chicken pieces with salt and pepper.
Add the chicken to the skillet and sauté until cooked through and lightly browned, about 5–7 minutes.
Remove the chicken from the skillet and set aside.
Prepare the Garlic Parmesan Sauce:
In the same skillet, reduce heat to medium and add the remaining 1 tablespoon of olive oil.
Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring to combine.
Bring the mixture to a gentle simmer.
Stir in the grated Parmesan cheese and Italian seasoning, continuing to stir until the cheese has melted and the sauce has slightly thickened, about 3–4 minutes.
Combine and Serve:
Return the cooked chicken, tortellini, and broccoli to the skillet with the sauce.
Gently toss to coat everything evenly with the creamy sauce.
Cook for an additional 2–3 minutes to heat through.
Taste and adjust seasoning with salt and freshly ground black pepper as needed.
Serve hot, garnished with freshly chopped parsley.
