Tater Tot Breakfast Casserole with Sausage Gravy
Ingredients:
– 1 pound ground breakfast sausage
– 1 small onion, diced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 2 cloves garlic, minced
– 1 (32-ounce) package frozen tater tots
– 8 large eggs
– 1 cup milk Homemade Samoas Girl Scout Cookies
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup shredded cheddar cheese
– 2 tablespoons chopped fresh parsley (optional)
Directions:
1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. In a large skillet, cook the ground sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Add the diced onion, red bell pepper, green bell pepper, and garlic. Cook for about 5 minutes until the vegetables are tender. Remove from heat.
3. Spread the cooked sausage and vegetable mixture evenly in the prepared baking dish. Top with the frozen tater tots in an even layer.
4. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Pour the egg mixture evenly over the tater tots.
5. Sprinkle the shredded cheddar cheese over the top of the casserole.
6. Cover the baking dish with foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 10-15 minutes until the casserole is set and the tater tots are golden brown.
