Lay out the flour tortillas on a clean surface.
Evenly distribute the buffalo ranch chicken mixture over half of each tortilla.
Sprinkle the shredded cheddar cheese over the chicken mixture.
Fold the empty half of each tortilla over the filling to create a half-moon shape.
Cook the Quesadillas:

Heat a large skillet over medium heat and add a small amount of butter or oil.
Place one or two quesadillas in the skillet, depending on the size of your pan.
Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese has melted.

Serve:

Cut each quesadilla into wedges and serve warm.
Optional: Serve with additional ranch dressing or blue cheese dressing for dipping.
Tips:

Chicken Options: Rotisserie chicken works well for this recipe, but you can also use any leftover cooked chicken or quickly cook and shred some chicken breasts.
Cheese Variations: Feel free to substitute or add other cheeses like mozzarella, Monterey Jack, or a Mexican blend for a different flavor profile.
Add-Ins: For extra flavor and texture, consider adding chopped green onions, diced bell peppers, or crumbled blue cheese to the filling.
Spice Level: Adjust the amount of buffalo sauce to your preferred level of spiciness. Potsticker Soup with Mushrooms Bok Choy
