Creamy Strawberry Banana Pudding .
Ingredients:
2 ripe bananas, mashed
1 ½ cups fresh strawberries, hulled and chopped
2 cups whole milk (or almond milk for dairy-free)
½ cup heavy cream (or coconut cream for dairy-free)
½ cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
½ cup crushed vanilla wafers (or graham crackers)
Whipped cream and fresh fruit for garnish
Directions:
In a blender, puree the mashed bananas and strawberries until smooth. Set aside.
In a medium saucepan over medium heat, whisk together milk, cream, sugar, cornstarch, and salt. Stir constantly until the mixture begins to thicken (about 5 minutes).
Reduce the heat to low and stir in the strawberry-banana puree. Continue to cook for another 2 minutes, ensuring the pudding is smooth.
Remove from heat and stir in the vanilla extract.
