Ingredients:

  • For the cookie base:
    • 1 ½ cups all-purpose flour
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup unsalted butter, softened
    • ½ cup granulated sugar
    • ½ cup packed brown sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 cup semi-sweet chocolate chips
  • For the cheesecake filling:
    • 8 oz cream cheese, softened
    • ¼ cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 large egg
    • 2 tablespoons sour cream (optional for extra creaminess)

Instructions:

  1. Prepare the Cookie Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
    • Add the egg and vanilla extract to the butter mixture and beat until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
    • Fold in the chocolate chips. Set the cookie dough aside.
  2. Prepare the Cheesecake Filling:
    • In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
    • Add the egg and beat until fully incorporated.
    • For an extra creamy texture, you can also add sour cream at this stage and mix it in.
  3. Assemble the Cookie Bites:
    • Take small spoonfuls of the cookie dough and roll them into balls (about 1 tablespoon of dough per ball). Place them on the prepared baking sheet.
    • Use your finger or the back of a spoon to create a small indentation in the center of each cookie dough ball.
    • Spoon about 1 teaspoon of the cheesecake filling into the center of each cookie ball.
  4. Bake:
    • Bake for 12-15 minutes, or until the edges of the cookie are golden brown and the cheesecake filling is set.
    • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
