Choco Cheesecake Cookie Bites
Ingredients:
- For the cookie base:
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- For the cheesecake filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 2 tablespoons sour cream (optional for extra creaminess)
Instructions:
- Prepare the Cookie Dough:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in the chocolate chips. Set the cookie dough aside.
- Prepare the Cheesecake Filling:
- In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the egg and beat until fully incorporated.
- For an extra creamy texture, you can also add sour cream at this stage and mix it in.
- Assemble the Cookie Bites:
- Take small spoonfuls of the cookie dough and roll them into balls (about 1 tablespoon of dough per ball). Place them on the prepared baking sheet.
- Use your finger or the back of a spoon to create a small indentation in the center of each cookie dough ball.
- Spoon about 1 teaspoon of the cheesecake filling into the center of each cookie ball.
- Bake:
- Bake for 12-15 minutes, or until the edges of the cookie are golden brown and the cheesecake filling is set.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve & Enjoy:
- These Choco Cheesecake Cookie Bites are best enjoyed slightly warm, but they can be stored in an airtight container at room temperature for up to 3-4 days.
- For an extra special touch, drizzle with melted chocolate or sprinkle with powdered sugar before serving.
Tips:
- If you want to make them even more indulgent, try adding a swirl of raspberry or strawberry jam on top of the cheesecake filling before baking.
- You can freeze these cookie bites by placing them in a single layer on a baking sheet, freezing until solid, and then transferring to a freezer-safe container. They’ll last for up to 2-3 months.
