Ingredients
- 2 oz cream cheese
- 2 cups shredded mozzarella cheese
- 2 large eggs
- 1 cup almond flour
- 2 oz thinly sliced cheddar cheese
- 6 cooked sausage patties (pre-cooked breakfast sausage works perfectly!)
Optional: Extra cheddar for topping, garlic powder or herbs for a flavor boost.
Instructions
Step 1: Preheat
Preheat your oven to 425°F (220°C). Line a baking tray with parchment paper or a silicone baking mat.
Step 2: Melt the Cheese
In a microwave-safe bowl, combine the cream cheese and mozzarella.
Microwave in 30-second bursts, stirring in between, until the mixture is fully melted and smooth. This forms the base of your “fathead” dough.
Step 3: Mix the Dough
In a separate mixing bowl, beat the eggs, then add in the almond flour.
Stir in the melted cheese mixture and mix until a sticky dough forms. Don’t worry if it’s tacky—wetting your hands will make it easier to work with.
Step 4: Shape & Fill
With wet hands, form the dough into 6 balls, about 3 inches wide, and flatten slightly.
Place a sausage patty and a slice of cheddar cheese in the center of each one, then gently wrap the dough around the filling, pinching the edges closed. Place seam side down on your baking tray.
Step 5: Bake
Bake for 12–15 minutes, or until the biscuits are golden brown and cooked through.
For an extra cheesy finish, sprinkle more cheddar on top during the last few minutes of baking.
