Ingredients (Makes 12–16 rollups):

For the filling:

  • 1 lb ground beef
  • 6–8 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp yellow mustard
  • 1 tbsp ketchup (optional)

For the dough:

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • ½ tsp salt
  • ½ tsp sugar
  • 1 tbsp olive oil
  • ¾ cup warm water

For the garlic butter topping:

  • 3 tbsp melted butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • Pinch of salt

Instructions:

Step 1: Make the Dough

In a large mixing bowl, combine flour, yeast, salt, and sugar. Add warm water and olive oil. Mix until a dough forms. Knead for 5–7 minutes until smooth and elastic.
Cover and let rise in a warm place for 1 hour or until doubled in size.

Step 2: Cook the Filling

While the dough rises, heat a skillet over medium heat. Add ground beef and chopped onion. Cook until browned. Drain excess fat.
Stir in salt, pepper, garlic powder, onion powder, mustard, and ketchup. Let cool slightly.
Add crumbled bacon and both cheeses to the meat mixture and stir to combine.

Step 3: Roll It Up

Once the dough has risen, roll it out on a floured surface into a rectangle (about ¼ inch thick).
Spread the cheeseburger mixture evenly over the dough.
Roll tightly into a log, then slice into 1.5-inch pieces.

Step 4: Bake

Place rollups onto a greased or parchment-lined baking sheet. Leave space between each roll.
Cover and let rest for 15 minutes.
Preheat oven to 375°F (190°C).
Bake for 18–22 minutes or until golden brown.

Step 5: Garlic Butter Finish

While the rollups bake, mix melted butter with garlic, parsley, and salt.
Brush the garlic butter over the hot rollups right out of the oven.
