Step-by-Step Instructions

Step 1: Bake the Potatoes

Start by baking the potatoes in a 400°F (200°C) oven for about 45 minutes or until soft. Once done, let them cool slightly, then peel and cube or mash them slightly—leave some chunks for texture.

Step 2: Cook the Bacon

In a large pot, cook the bacon until crispy. Remove the bacon and place it on paper towels to drain. Leave a bit of the bacon grease in the pot for extra flavor.

Step 3: Sauté Aromatics

Add butter to the pot with the remaining bacon fat. Once melted, add the chopped onions and garlic. Cook on medium heat for about 3–4 minutes until soft and fragrant.

Step 4: Make the Roux

Sprinkle in the flour and whisk continuously for about 2 minutes. This helps thicken the soup and adds a creamy texture.

Step 5: Add Milk and Cream

Slowly pour in the milk while stirring constantly to avoid lumps. Add the heavy cream and mix well.
