 Ingredients

 Oatmeal Cookie Crust:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ¾ cup brown sugar
  • 12 tablespoons unsalted butter, softened

 Homemade Apple Filling (recommended!):

  • 2 tablespoons butter
  • 3–4 medium apples (peeled, cored, and diced into ¼-inch cubes)
  • â…“ cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

 Instructions

 Make the Filling:

  1. In a skillet over medium heat, melt the butter.
  2. Add the diced apples and stir for 2–3 minutes.
  3. Add brown sugar, cinnamon, and a pinch of salt. Stir and let cook for 5–7 minutes until apples are soft.
  4. Add the cornstarch mixture, stir continuously until the filling thickens.
  5. Remove from heat and add vanilla (if using). Let it cool.

 Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, oats, brown sugar, and butter until crumbly.
  3. Grease a mini muffin tin (very important!).
  4. Press a spoonful of the mixture into each cup, pressing down and up the sides to form little crusts.

 Assemble:

  1. Spoon the apple filling into each crust.
  2. Top with a pinch of leftover crust mixture (optional but adds crunch!).
  3. Bake for 15–20 minutes, or until the tops are golden brown.
  4. Let cool completely before removing from the tin.

 Serving Ideas:

  • Top with a scoop of vanilla ice cream
  • Drizzle with caramel sauce
  • Serve warm with a cup of cinnamon tea or coffee
