 Ingredients
 Oatmeal Cookie Crust:

- ¾ cup brown sugar

 Homemade Apple Filling (recommended!):
- 2 tablespoons butter
- 3–4 medium apples (peeled, cored, and diced into ¼-inch cubes)

- 1 teaspoon ground cinnamon
- Pinch of salt
- 1 teaspoon vanilla extract (optional)
- 1 teaspoon cornstarch mixed with 1 tablespoon water
 Instructions
 Make the Filling:
- In a skillet over medium heat, melt the butter.
- Add the diced apples and stir for 2–3 minutes.
- Add brown sugar, cinnamon, and a pinch of salt. Stir and let cook for 5–7 minutes until apples are soft.
- Add the cornstarch mixture, stir continuously until the filling thickens.
- Remove from heat and add vanilla (if using). Let it cool.
 Prepare the Crust:
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, oats, brown sugar, and butter until crumbly.
- Grease a mini muffin tin (very important!).
- Press a spoonful of the mixture into each cup, pressing down and up the sides to form little crusts.
 Assemble:
- Spoon the apple filling into each crust.
- Top with a pinch of leftover crust mixture (optional but adds crunch!).
- Bake for 15–20 minutes, or until the tops are golden brown.
- Let cool completely before removing from the tin.
