 Ingredients

For the Meat Mixture:

  • 1 lb (450g) ground beef
  • 1 small onion, finely diced
  • 1 garlic clove, minced (optional)
  • 1 tbsp vegetable oil
  • 1 can (15 oz / 425g) sloppy joe sauce (or homemade – recipe below)
  • 1/2 tsp paprika (optional)
  • Salt and black pepper to taste

For the Biscuit Topping:

  • 1 can refrigerated biscuit dough (like Pillsbury Grands)
  • 1 cup shredded cheddar cheese (optional but highly recommended)

 Instructions

 Step 1: Prepare the Meat Base

  1. In a large skillet over medium heat, warm the oil. Add the ground beef and cook until browned, breaking it up as it cooks.
  2. Add the diced onion (and garlic, if using), cooking until soft and fragrant, about 3-4 minutes.
  3. Stir in the sloppy joe sauce and season with paprika, salt, and pepper. Let simmer for 5 minutes, stirring occasionally.

Homemade Sloppy Joe Sauce:
Mix together:

  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • Pinch of chili flakes (optional)

 Step 2: Assemble the Casserole

  1. Preheat your oven to 350°F (180°C).
  2. Transfer the meat mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  3. Open the biscuit dough and cut each biscuit into halves or quarters depending on size.
  4. Place the biscuit pieces over the meat mixture, spacing them slightly so they can expand.
  5. Sprinkle shredded cheddar cheese on top for an extra golden, melty finish.

 Step 3: Bake

  1. Bake uncovered for 20–25 minutes, or until the biscuits are puffed and golden brown.
  2. If the tops are browning too quickly, loosely cover with foil during the last 5 minutes.
  3. Let rest for 5 minutes before serving.
