 Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 3 tbsp olive oil
- 1/4 cup diced yellow onion
- 1 cup extra-long grain rice (uncooked)
- 1 (14.5 oz) can diced tomatoes, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp chili powder
- 1/2 tsp cumin (optional for more depth)
- 1/2 tsp smoked paprika
- 2 cups chicken broth (or water + bouillon cube)
- Salt and black pepper to taste
- Juice of half a lime
- Optional toppings: shredded cheddar, sour cream, avocado slices, chopped cilantro, hot sauce
 Instructions:
Step 1: Sauté the Chicken
In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium-high heat.
Add the chicken, season with salt, pepper, garlic powder, onion powder, chili powder, cumin, and paprika.
Cook until lightly golden on all sides, about 5–6 minutes. Remove and set aside.
Step 2: Build the Flavor
In the same pot, add the remaining tablespoon of olive oil and the diced onion. Sauté until soft and golden, about 2–3 minutes.
Stir in the uncooked rice and toast it for about 1 minute until slightly golden. This step adds an amazing nutty flavor to the dish.
Step 3: Combine Everything
Return the chicken to the pot, then add the diced tomatoes, black beans, and chicken broth.
Stir everything together, making sure the rice is fully submerged. Taste and adjust seasoning if needed.
Step 4: Simmer
Bring the mixture to a gentle boil. Cover the pot, reduce the heat to low, and let it simmer for 18–20 minutes, or until the rice is cooked and all the liquid has been absorbed.
Do not stir while it cooks — this helps the rice stay fluffy.
Step 5: Rest & Fluff
Once done, turn off the heat and let the pot sit (covered) for 5 minutes.
After resting, fluff the rice gently with a fork. Squeeze in the lime juice and stir lightly.
