Ingredients

 For the Burger Packets:

  • 1 lb ground beef (form into 4 burger patties)
  • Salt & black pepper, to taste
  • 1 tsp garlic powder
  • 4 slices Swiss cheese
  • 1 cup mushrooms, sliced
  • 1 tbsp butter
  • 1 red bell pepper, sliced into rings
  • 1 lb baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Optional: 1 clove garlic, minced (for added flavor in mushrooms or potatoes)

Instructions

Step 1: Preheat Your Grill or Oven

  • Preheat your grill or oven to 400°F (200°C).

Step 2: Sauté the Mushrooms

  • In a small skillet over medium heat, melt 1 tablespoon butter.
  • Add sliced mushrooms (and minced garlic if using).
  • Sauté for 5–6 minutes, or until mushrooms are golden brown and tender.
  • Remove from heat and set aside.

Time: 6 minutes

Step 3: Prep the Potatoes

  • In a mixing bowl, toss halved baby potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper.
  • Make sure potatoes are well coated. This will help them crisp and soften nicely during cooking.

Time: 3 minutes

Step 4: Assemble the Foil Packets

  • Lay out 4 large sheets of heavy-duty foil (about 12×12 inches each).
  • In the center of each sheet, place a ring of red bell pepper.
  • On top of the pepper ring, place a seasoned ground beef patty (lightly seasoned with salt and pepper).
  • Spoon some of the sautéed mushrooms over each patty.
  • Top each with a slice of Swiss cheese.
  • Arrange a portion of the seasoned baby potatoes around the patty in each packet.

Time: 5 minutes

Step 5: Seal and Cook

  • Fold each foil packet tightly: bring the sides up and over the contents, sealing edges to trap steam inside.
  • Place on the grill or in the preheated oven and cook for 25–30 minutes, or until:
    • The potatoes are fork-tender
    • The burger patties are fully cooked (160°F internal temp)

Time: 25–30 minutes

Step 6: Serve and Garnish

  • Carefully open each foil packet — be cautious of hot steam.
  • Sprinkle with fresh chopped parsley before serving.
  • Serve right in the foil for easy cleanup, or plate with additional toppings like mustard, pickles, or extra cheese if desired.

  • Enjoy with a side of corn on the cob or grilled asparagus.
