Quick Overview

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes
  • Servings: 4

Ingredients

For the Sausages & Potatoes:

  • 4 pork sausages (your favorite variety — classic, herbed, or Cumberland style)
  • 4 large potatoes, peeled and cubed
  • ¼ cup milk (warm, for extra creaminess)
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste

For the Onion Gravy:

  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 cup beef broth (low-sodium recommended)

Instructions

1. Prepare the Mashed Potatoes

  • In a large pot, add the peeled and cubed potatoes to cold salted water and bring to a boil.
  • Cook for 15–20 minutes, or until fork-tender.
  • Drain and return the potatoes to the pot.
  • Add the butter and warm milk, then mash until smooth and creamy.
  • Season to taste with salt and black pepper.

Time: ~20 minutes (overlaps with sausage cooking)

2. Cook the Sausages

  • While the potatoes boil, heat a nonstick skillet or frying pan over medium heat.
  • Add the sausages and cook for 10–12 minutes, turning occasionally, until browned on all sides and cooked through (internal temp: 160°F/71°C).
  • Transfer sausages to a plate and cover loosely with foil to keep warm.

Time: 10–12 minutes

3. Make the Onion Gravy

  • In the same skillet, reduce heat to medium-low and add olive oil.
  • Stir in the sliced onions and sauté for 5–6 minutes, or until soft and caramelized.
  • Sprinkle the flour over the onions and cook for 1 minute, stirring constantly.
  • Slowly pour in the beef broth, stirring to prevent lumps.
  • Simmer for 3–4 minutes, or until the gravy thickens to your desired consistency.

Time: 7–8 minutes

4. Assemble and Serve

  • Spoon a generous portion of creamy mashed potatoes onto each plate.
  • Place one sausage (or more!) on top or to the side.
  • Drizzle with warm, savory onion gravy.
  • Optional: Garnish with fresh parsley or serve with steamed green beans or peas.

Tips & Variations

  • Add garlic to the mashed potatoes or gravy for extra depth of flavor.
  • Make it creamier: Use heavy cream or sour cream instead of milk in the mashed potatoes.
  • Use vegetarian sausage or swap pork for chicken, turkey, or plant-based options.
  • Extra rich gravy: Add a splash of Worcestershire sauce or a teaspoon of Dijon mustard to the onion gravy.
  • Caramelize longer: For sweeter, deeper onion flavor, cook onions for up to 15 minutes.

Storage & Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or in a covered skillet over low heat with a splash of broth or milk to keep it moist.
