Hearty Ground Beef Vegetable Soup

Ingredients
- 2 pounds ground beef
- 4 carrots, peeled and diced
- 4 celery ribs, chopped
- 1 large onion, chopped
- 4 medium potatoes, peeled and cut into 1-inch cubes
- 1 (15.25 oz) can whole kernel corn, drained and rinsed
- 1 (15 oz) can green beans, drained and rinsed
- 1 (15 oz) can peas, undrained
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can whole tomatoes, crushed by hand or fork
- 1 bay leaf (or more, if desired)
- 1/8 tsp ground thyme
- Ground black pepper, to taste
- 1/4 cup water, or as needed while cooking
Directions
Step 1: Brown the Ground Beef
In a large stockpot over medium-high heat, crumble the ground beef and cook until browned and fully cooked—about 7 to 10 minutes.
Stir occasionally to prevent sticking.
Once browned, drain excess fat to avoid a greasy soup.
Step 2: Sauté Aromatics
Add chopped carrots, celery, and onion directly to the cooked beef.
Cook for about 5 minutes, stirring regularly, until the vegetables begin to soften and release their aroma.
Step 3: Add Potatoes and Canned Vegetables
Stir in the diced potatoes, followed by corn, green beans, and peas (with their liquid).
Then pour in the tomato sauce and add the crushed whole tomatoes for a rich, hearty base.
Step 4: Season and Simmer
Add in black pepper to taste, bay leaf, and thyme.
Pour in 1/4 cup of water, especially if the soup seems too thick at this stage. You can add more during cooking if needed.
Cover the pot and bring the soup to a gentle simmer. Stir occasionally and let it cook for about 1 hour, or until the potatoes are fork-tender and flavors are well combined.
