 Ingredients:

For the Sloppy Joe Mixture:

  • 1 lb (450 g) ground beef (80/20)
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup tomato sauce (or ketchup)
  • 2 tbsp tomato paste
  • 1 tbsp mustard
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce (optional, but adds great flavor)
  • Salt and black pepper to taste

For the Mac & Cheese:

  • 2 cups small pasta (like elbow or penne)
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese (mixing cheeses is great too!)
  • Pinch of salt and black pepper

To Serve:

  • 4 to 6 large flour tortillas
  • Butter for brushing (optional, for crisping)
  • Extra shredded cheese (optional)
  • Green onions or pickles for garnish (optional)

 Instructions:

1. Make the Sloppy Joe Mixture:

  • In a large skillet, brown the ground beef until fully cooked and no longer pink.
  • Add the diced onion and minced garlic, cooking until softened.
  • Stir in the tomato sauce, tomato paste, brown sugar, mustard, Worcestershire sauce, salt, and pepper.
  • Let the mixture simmer on low heat for about 10 minutes until it thickens and the flavors meld.

2. Make the Mac & Cheese:

  • Cook the pasta according to package directions, then set aside.
  • In a saucepan, melt the butter, then stir in the flour to make a roux, cooking for about 1 minute.
  • Gradually whisk in the milk, continuing to stir until the sauce thickens.
  • Add the shredded cheese, salt, and pepper, stirring until the cheese is fully melted and the sauce is smooth.
  • Stir in the cooked pasta until well coated with the cheese sauce.

3. Assemble the Wraps:

  • Warm the tortillas slightly in a skillet or microwave to make them more pliable.
  • In the center of each tortilla, add a portion of the mac & cheese, followed by a generous spoonful of the Sloppy Joe mixture.
  • Optionally, add extra shredded cheese or a slice of cheese for an even cheesier wrap.
  • Roll the tortilla tightly like a burrito.
  • Toast the wrap in a skillet with a little butter, browning it on all sides for a crispy finish.

 Pro Tips:

  • You can make a larger batch of Sloppy Joe and Mac & Cheese to store in the fridge for a quick meal later.
  • Add hot sauce or chili flakes for a spicy kick!
  • Feel free to swap ground beef for turkey or chicken for a leaner option.
