  • Rich, buttery pecan pie flavor in truffle form
  • Simple ingredients, maximum flavor
  • Easy to make ahead and store
  • A crowd-pleaser for all occasions

Ingredients

For the Truffle Filling:

  • 1 cup finely chopped pecans (toasted for extra flavor)
  • 1 cup crushed graham crackers (about 8 whole crackers)
  • 1/2 cup powdered sugar
  • 1/4 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened

For the Chocolate Coating:

  • 1 1/2 cups semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or vegetable oil (optional, for smoother dipping)

Instructions

Step 1: Prepare the Filling

In a large mixing bowl, combine the chopped pecans, crushed graham crackers, and powdered sugar.
Add in the light corn syrup, melted butter, and vanilla extract. Mix well using a spatula or spoon until the ingredients are evenly coated.
Add the softened cream cheese and mix until smooth, creamy, and fully combined. The mixture should be soft but able to hold its shape.

Step 2: Form the Truffles

Using a small cookie scoop or your hands, roll the mixture into balls approximately 1 inch in diameter.
Place the balls on a parchment-lined baking sheet.
Refrigerate for at least 30 minutes to allow the truffles to firm up.

Step 3: Melt the Chocolate

In a microwave-safe bowl or double boiler, melt the chocolate chips with the coconut oil (if using) until completely smooth.
Microwave in 30-second intervals, stirring in between, until fully melted.

Step 4: Dip the Truffles

Remove the chilled truffle balls from the fridge.
Using a fork, toothpick, or dipping tool, dip each ball into the melted chocolate.
Allow the excess chocolate to drip off, then place the coated truffle back onto the parchment-lined baking sheet.

Step 5: Chill and Serve

Once all truffles are coated, refrigerate again for another 30 minutes or until the chocolate is completely set.
Serve chilled or at room temperature.
Store leftovers in an airtight container in the refrigerator for up to 1 week.

Tips for Success:

  • Toasting the pecans enhances their flavor—bake them at 350°F (175°C) for 5–7 minutes before using.
  • Don’t skip chilling the truffles before dipping; this helps them stay firm while coating.
  • For a festive touch, drizzle white chocolate over the top or sprinkle with chopped pecans before the coating sets.

Variations:

  • White Chocolate Version: Dip in melted white chocolate for a sweeter twist.
  • Bourbon Pecan Truffles: Add 1–2 teaspoons of bourbon to the filling for an adult treat.
  • Salted Caramel Touch: Drizzle salted caramel on top before serving.

Perfect For:

  • Holiday dessert trays
  • Christmas cookie exchanges
  • Thanksgiving snacks
  • Homemade edible gifts
  • Any time you crave a bite of pecan pie without baking a whole pie
