Cheesy Quesarito

(Taco Bell Copycat)

Ingredients

For the Beef:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water

For the Mexican Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp tomato sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt & pepper to taste

For the Nacho Cheese Sauce:

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Pinch of cayenne (optional)

For the Chipotle Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp chipotle in adobo sauce (or puree)
  • 1 tsp lemon or lime juice
  • 1/2 tsp garlic powder

Assembly:

  • 4 large flour tortillas
  • 4 small flour tortillas
  • Shredded cheddar (for melting between layers)
  • Butter or oil for toasting

Instructions

Step 1: Cook the Beef

  1. In a skillet over medium heat, cook ground beef until browned.
  2. Add taco seasoning and 1/2 cup water. Simmer for 5–7 minutes until thickened. Set aside.

Step 2: Make the Rice

  1. Combine all rice ingredients in a saucepan.
  2. Bring to a boil, cover, reduce heat, and simmer for 15 minutes or until rice is tender and fluffy.

Step 3: Prepare the Nacho Cheese

  1. In a small saucepan, melt butter and stir in flour. Cook for 1 minute.
  2. Gradually whisk in milk and cook until thickened.
  3. Add cheese and stir until smooth. Remove from heat.

Step 4: Make Chipotle Sauce

  1. Mix mayo, chipotle, lime juice, and garlic powder in a small bowl until smooth.

Assemble the Quesarito

  1. Lay a small tortilla on a flat surface and sprinkle shredded cheese on top.
  2. Place a large tortilla over it and heat in a skillet until the cheese melts and the tortillas stick together.
  3. In the center of the large tortilla, add:
    • A spoonful of chipotle sauce
    • A scoop of Mexican rice
    • A layer of taco beef
    • A drizzle of nacho cheese
  4. Roll it tightly like a burrito.
  5. Toast the wrapped quesarito in a skillet until golden and crispy on all sides.

Serving Ideas

  • Serve with sour cream, guacamole, or spicy salsa.
  • Add black beans or corn for extra texture and flavor.

Tips for Success

  • Don’t overfill to avoid tearing the tortilla.
  • Use freshly shredded cheese for best melt.
  • Swap ground beef for shredded chicken or veggies if desired.
