Cheesy Quesarito
(Taco Bell Copycat)
Ingredients
For the Beef:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
For the Mexican Rice:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp tomato sauce
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- Salt & pepper to taste
For the Nacho Cheese Sauce:
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- Pinch of cayenne (optional)
For the Chipotle Sauce:
- 1/2 cup mayonnaise
- 1 tbsp chipotle in adobo sauce (or puree)
- 1 tsp lemon or lime juice
- 1/2 tsp garlic powder
Assembly:
- 4 large flour tortillas
- 4 small flour tortillas
- Shredded cheddar (for melting between layers)
- Butter or oil for toasting
Instructions
Step 1: Cook the Beef
- In a skillet over medium heat, cook ground beef until browned.
- Add taco seasoning and 1/2 cup water. Simmer for 5–7 minutes until thickened. Set aside.
Step 2: Make the Rice
- Combine all rice ingredients in a saucepan.
- Bring to a boil, cover, reduce heat, and simmer for 15 minutes or until rice is tender and fluffy.
Step 3: Prepare the Nacho Cheese
- In a small saucepan, melt butter and stir in flour. Cook for 1 minute.
- Gradually whisk in milk and cook until thickened.
- Add cheese and stir until smooth. Remove from heat.
Step 4: Make Chipotle Sauce
- Mix mayo, chipotle, lime juice, and garlic powder in a small bowl until smooth.
Assemble the Quesarito
- Lay a small tortilla on a flat surface and sprinkle shredded cheese on top.
- Place a large tortilla over it and heat in a skillet until the cheese melts and the tortillas stick together.
- In the center of the large tortilla, add:
- A spoonful of chipotle sauce
- A scoop of Mexican rice
- A layer of taco beef
- A drizzle of nacho cheese
- Roll it tightly like a burrito.
- Toast the wrapped quesarito in a skillet until golden and crispy on all sides.
Serving Ideas
- Serve with sour cream, guacamole, or spicy salsa.
- Add black beans or corn for extra texture and flavor.
