 Ingredients:

  • 2 large russet potatoes (perfect for baking)
  • 1/2 lb steak (ribeye or sirloin), cut into bite-sized cubes
  • 8 large shrimp, peeled and deveined
  • 1 cup broccoli florets, steamed until just tender
  • 1 cup shredded cheddar cheese (or a blend of cheddar and mozzarella)
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon steak seasoning (or a mix of paprika, garlic powder, black pepper, onion powder)
  • 1/2 teaspoon crushed red pepper flakes (optional for heat)
  • Salt and pepper, to taste
  • Fresh chopped parsley, for garnish
  • Optional: Ranch dressing, sour cream, or cheese sauce for drizzling

 Instructions:

Step 1: Bake the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry, then poke a few holes in each potato using a fork.
  3. Rub them with olive oil and sprinkle with salt.
  4. Place directly on the oven rack or on a baking sheet and bake for 50–60 minutes, or until fork-tender and the skin is crispy.

Step 2: Cook the Steak

  1. While the potatoes bake, heat 1 tablespoon of butter in a skillet over medium-high heat.
  2. Season the steak cubes with salt, pepper, and steak seasoning.
  3. Sear the steak pieces for 3–5 minutes until browned and cooked to your preferred doneness. Remove and set aside.

Step 3: Cook the Shrimp

  1. In the same pan, add another tablespoon of butter and the minced garlic.
  2. Add shrimp and cook for 2–3 minutes per side until they turn pink and are cooked through.
  3. Optional: sprinkle with red pepper flakes for a spicy kick.

Step 4: Prepare the Filling

  1. Once the potatoes are cool enough to handle, slice each one lengthwise and gently scoop out some of the flesh (reserve it in a bowl).
  2. Mix the scooped potato with heavy cream, half the shredded cheese, and a bit of salt and pepper. Stir until creamy.
  3. Add the steamed broccoli to the mixture and combine.

Step 5: Assemble the Potatoes

  1. Fill each potato shell with the creamy mashed mixture.
  2. Top with the cooked steak cubes and shrimp.
  3. Sprinkle the remaining cheese on top.

Step 6: Final Bake

  1. Place the stuffed potatoes back into the oven and bake for 10–12 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven, garnish with fresh parsley, and drizzle with ranch or cheese sauce if desired.

Tips for Best Results:

  • Use freshly shredded cheese for better melt and flavor.
  • Don’t overcook the shrimp – they become rubbery quickly.
  • You can swap the steak with grilled chicken or sautéed mushrooms for variety.

 Nutrition Benefits:

  • Broccoli: Packed with fiber and vitamin C.
  • Shrimp: High in protein, low in calories.
