Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf
Ingredients
1 ½ lbs ground chicken
¾ cup breadcrumbs (Italian-style or plain with seasoning)
1 cup grated Parmesan cheese
2 eggs, beaten
½ cup milk
4 cloves garlic, minced
1 tbsp fresh parsley (or 1 tsp dried)
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 cup shredded mozzarella cheese (for topping)
For Garlic Parmesan Glaze:
3 tbsp unsalted butter
3 cloves garlic, minced
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
1 tbsp heavy cream (optional, for creamier texture)
 Instructions
Preheat oven:
Set to 375°F (190°C). Lightly grease a loaf pan or line with parchment.
Mix the meatloaf:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, milk, garlic, parsley, Italian seasoning, salt, and pepper. Mix until just combined (don’t overmix).
Shape & bake:
Press mixture evenly into loaf pan. Bake for 35–40 minutes, until fully cooked (internal temp 165°F / 74°C).
Make the glaze:
While meatloaf bakes, melt butter in a small saucepan over medium heat. Add garlic and cook until fragrant (about 1 min). Stir in Parmesan, parsley, and cream if using.
Top & finish:
Remove meatloaf from oven, sprinkle mozzarella on top, and pour the garlic Parmesan glaze over. Return to oven for 5–7 minutes until cheese is melted and bubbly.
Serve:
Let rest 5 minutes before slicing. Garnish with extra parsley and Parmesan.
