  • 1 tablespoon lime zest
  • 1/4 cup fresh cilantro, chopped

 Instructions

1. Prepare the Scallops

  • Start by patting the scallops completely dry using paper towels. This step is crucial because scallops won’t sear properly if they are wet; instead, they will steam and lose their golden-brown crust.
  • Lightly season each side with salt and freshly ground black pepper.

2. Heat the Pan

3. Sear the Scallops

  • Pour in the fresh lime juice, stirring to deglaze the pan and release all the flavorful bits stuck to the bottom.

5. Combine and Serve
