Chicken Scampi with Garlic Parmesan Rice

Directions
Step 1: Make the Garlic Parmesan Rice
- In a medium saucepan, melt the butter over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in the rice and toast for about 2 minutes.
- Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and cook for 18–20 minutes, or until the rice is tender and all the liquid is absorbed.
- Stir in the Parmesan cheese (and heavy cream if using). Season with salt and pepper. Keep warm.
Step 2: Cook the Chicken Scampi
