Cheddar Bay Biscuit Seafood Pot Pie

Ingredients
Seafood Filling:
- 1 tbsp butter
- 1/2 cup onion, finely chopped
- 1/2 cup celery, diced
- 1/2 cup carrots, finely diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups seafood stock (or chicken broth)
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 tsp Dijon mustard (optional)
- 1/2 tsp Old Bay seasoning (or seafood seasoning)
- 1/4 tsp smoked paprika
- Salt and black pepper, to taste
- 1 cup frozen peas
- 1/2 cup corn (fresh or frozen)
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb lobster or crab meat (or firm white fish like cod)
- 1/2 cup fresh parsley, chopped
Cheddar Bay Biscuit Topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 cup cold butter, cubed
- 1 cup shredded cheddar cheese
- 3/4 cup cold milk or buttermilk
For brushing:
- 2 tbsp melted butter
- 1/2 tsp dried parsley
- Pinch of garlic powder
Instructions
1. Make the Seafood Filling
- In a large skillet, melt butter over medium heat. Add onion, celery, and carrots. Cook 5 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the vegetables and stir to form a roux. Cook for 1–2 minutes.
- Gradually whisk in the stock, then add cream and milk. Stir until thickened and creamy.
- Season with Dijon mustard, Old Bay, paprika, salt, and pepper.
- Stir in peas and corn. Add shrimp and seafood, cooking for 3–4 minutes until just cooked through.
- Remove from heat and stir in fresh parsley. Transfer mixture to a deep baking dish.
2. Make the Biscuit Topping
- Preheat oven to 400°F (200°C).
- In a large bowl, combine flour, baking powder, salt, garlic powder, onion powder, and paprika.
- Cut in the cold butter until mixture resembles coarse crumbs.
- Stir in cheddar cheese.
- Add milk and mix until dough just comes together.
- Drop spoonfuls of dough evenly over the seafood filling.
3. Bake and Serve
- Bake for 25–30 minutes, until biscuits are golden and cooked through.
- Brush biscuits with melted butter mixed with parsley and garlic powder.
- Serve hot with a side salad or steamed vegetables.
