Cheddar Bay Biscuit Seafood Pot Pie

A rich, creamy seafood filling topped with golden, cheesy Cheddar Bay biscuits — this dish is the ultimate comfort food! Perfect for family dinners or special gatherings, it brings together fresh seafood flavors with the irresistible crunch of homemade biscuits.

 Ingredients

Seafood Filling:

  • 1 tbsp butter
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, diced
  • 1/2 cup carrots, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp Old Bay seasoning (or seafood seasoning)
  • 1/4 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup frozen peas
  • 1/2 cup corn (fresh or frozen)
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb lobster or crab meat (or firm white fish like cod)
  • 1/2 cup fresh parsley, chopped

Cheddar Bay Biscuit Topping:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 cup cold butter, cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup cold milk or buttermilk

For brushing:

  • 2 tbsp melted butter
  • 1/2 tsp dried parsley
  • Pinch of garlic powder

 Instructions

1. Make the Seafood Filling

  1. In a large skillet, melt butter over medium heat. Add onion, celery, and carrots. Cook 5 minutes until softened.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Sprinkle flour over the vegetables and stir to form a roux. Cook for 1–2 minutes.
  4. Gradually whisk in the stock, then add cream and milk. Stir until thickened and creamy.
  5. Season with Dijon mustard, Old Bay, paprika, salt, and pepper.
  6. Stir in peas and corn. Add shrimp and seafood, cooking for 3–4 minutes until just cooked through.
  7. Remove from heat and stir in fresh parsley. Transfer mixture to a deep baking dish.

2. Make the Biscuit Topping

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine flour, baking powder, salt, garlic powder, onion powder, and paprika.
  3. Cut in the cold butter until mixture resembles coarse crumbs.
  4. Stir in cheddar cheese.
  5. Add milk and mix until dough just comes together.
  6. Drop spoonfuls of dough evenly over the seafood filling.

3. Bake and Serve

  1. Bake for 25–30 minutes, until biscuits are golden and cooked through.
  2. Brush biscuits with melted butter mixed with parsley and garlic powder.
  3. Serve hot with a side salad or steamed vegetables.

 Tips for Success

  • Use a mix of shrimp, lobster, crab, or fish for variety.
  • For lighter filling, swap half the cream with evaporated milk.
  • Add a splash of lemon juice at the end for brightness.
  • Make ahead: prepare the filling a day before, then bake with biscuits fresh.
