 Ingredients

For the Crust:

  • 6 cups Rice Krispies cereal
  • ¼ cup salted butter
  • 1 (10 oz) bag mini marshmallows

  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 (7 oz) jar marshmallow crème (Fluff)
  • 1 (8 oz) tub Cool Whip, thawed

 Directions

1. Prep the Pan

Grease a 9- or 10-inch springform pan with nonstick spray or butter. You can also line the bottom with parchment paper for easy removal later.

2. Make the Crust

  1. Place the Rice Krispies cereal in a large bowl.
  2. In a medium saucepan over low heat, melt the butter. Add the mini marshmallows, stirring constantly until completely melted and smooth.
  3. Pour the melted marshmallow mixture over the cereal and stir until all the cereal is evenly coated.
  4. Transfer the sticky mixture into the prepared pan. Using a greased cup or spatula, firmly press it down into an even crust that goes slightly up the sides.
  5. Let it sit at room temperature for 15–20 minutes to set.

3. Make the Cheesecake Filling

  1. In a large bowl or stand mixer, beat the cream cheese, sugar, and vanilla together for about 1 minute until smooth and creamy.
  2. Add the marshmallow crème and mix until fully blended.
  3. Gently fold in the Cool Whip with a spatula. Do not overmix — this keeps the filling light and airy.

4. Assemble the Cheesecake

  • Pour the cheesecake filling into the prepared Rice Krispy crust.
  • Smooth the top using a spatula or the back of a spoon.
  • Cover and refrigerate for at least 2 hours (4 hours for best results) until firm and set.
