 Ingredients

  • 1 cup carrots, finely grated
  • ½ cup zucchini, finely grated (seeds removed)
  • ¼ cup red bell pepper, very finely diced
  • 2 tablespoons red onion, minced
  • 1 clove garlic, finely grated
  • ½ cup cream cheese, softened
  • ¼ cup Greek yogurt or mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper, to taste

 Instructions

  1. Prepare the Vegetables
    Grate the carrots and zucchini. Squeeze out excess moisture using a clean kitchen towel—this step is very important to avoid a watery spread.
  2. Sauté for Extra Flavor (Optional but Recommended)
    Heat olive oil in a pan over medium heat. Add onion and garlic, sauté for 1 minute.
    Add carrots, zucchini, and bell pepper. Cook for 3–4 minutes until slightly soft.
    Remove from heat and let cool completely.
