1 lb lean ground beef
2 bags baked tortilla chips (lower-fat and lower-calorie)
1 packet taco seasoning mix (reduced-sodium, sugar-free)
1 can refried beans (fat-free or low-fat)
1 small onion, diced
3 small tomatoes, diced
2-3 green onions, finely chopped
16 oz shredded reduced-fat cheese
Directions:
Preparation: Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper.
Cooking the Beef: In a non-stick pan over medium heat, cook the lean ground beef with diced onion until the beef is crumbled and the onion is translucent. Drain any excess fat.
Seasoning the Beef: Reduce the heat to low and add the taco seasoning mix to the beef. Stir well to combine and cook for a few more minutes until the flavors meld.
Assembly: Divide the baked tortilla chips evenly between the two prepared baking sheets, spreading them out in a single layer.
Layering the Nachos: Spoon the refried beans onto each tray of chips in dollops, repeating the process for both trays. Evenly distribute half of the seasoned ground beef mixture and half of the shredded reduced-fat cheese over each tray of nachos.
Baking: Place the baking sheets in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
Finishing Touches: Remove from the oven and top with diced tomatoes and finely chopped green onions.
