Ingredients:
4 boneless, skinless chicken breasts
2 large onions, thinly sliced
1 cup beef broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp thyme
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil and sauté onions until caramelized.
Add beef broth and thyme, simmer until reduced.
Slice pockets into the chicken breasts and stuff with caramelized onions and mozzarella cheese.
Place stuffed chicken in a baking dish, top with remaining onions and sprinkle with Parmesan.
Bake for 25-30 minutes until chicken is cooked through.
