Island Pecan Pie

My husband, who’s often skeptical about attempting recipes couldn’t resist being drawn into the kitchen by that scent. Let’s not overlook my one, whose eyes sparkled with delight on the sight . It was successful! Our household rapidly fell in love, cherishing each chew because it introduced again reminiscences of sun-soaked island holidays on the times.

  • 1 pie crust (do-it-yourself or store-bought)
  • 1 3/4 cups sugar
  • 1 cup pecans, roughly chopped
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup (1 stick) unsalted butter, melted
  • 5 eggs, room temperature
  • 1 tablespoon cornstarch
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt

How To Make Island Pecan Pie

  1. Preheat oven to 300º F.
  2. In a big bowl, beat collectively sugar, eggs, cornstarch, flour and salt till completely mixed and integrated.
  3. Combine in melted butter, then fold in pecans, pineapple and coconut.
  4. Place pie crust in a spherical baking dish, then pour pecan combination over the crust. Crimp edges of crust.
  5. Place baking dish in oven and bake for 55 minutes, or till nearly set.
  6. Cowl with aluminum foil and bake for an additional 15-20 or till heart is simply set.
