Amish Apple Fritter

Ingredients:

2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
3/4 cup whole milk
2 teaspoons vanilla extract
2 tablespoons unsalted butter, melted
2 cups diced apples (about 2 large apples, peeled and cored)
Vegetable oil, for frying
Glaze:
1 1/2 cups powdered sugar
3-4 tablespoons milk
1 teaspoon vanilla extract
Instructions:
Prepare the Batter:
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, whisk the eggs, milk, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined.
Stir in the melted butter and then fold in the diced apples.
Heat the Oil:
In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the correct temperature.
